Ingredients- Brinjal (Big fat) - 2 no.
- Cooking oil - 4 tablespoon
- Cumin seeds - 1 teaspoon
- Onion - 1 medium sized
- Garlic - 5 pods
- Green chili - 2 no
- Tomato - 2 medium sized
- Chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Coriander leaf - 3 springs
Preparation
- De-skin and mash brinjals
- Wash and dry brijal
- Slit the skin with knifes tentatively
- Apply little oil
- Cook in a hot oven for 12 minutes or
- Pierce in a skewer and expose to direct flame in stove until skin becomes brownish and shrunken
- Cool and remove the skin
- Mash them (now they will be soft and easy to mash)
- Fine chop garlic and green chilies
- Chop onion and tomato
Cooking
- Heat oil in a kadai and temper cumin
- Add chopped green chilies and garlic & fry
- Add onion and saute until it turn brown
- Add salt, chili powder, turmeric powder, coriander powder and saute until they off flavor
- Add tomatoes and cook
- Add mashed brinjal and cook until oil starts leaving from side
- Sprinkle water (only) if necessary
- Check for salt, sprikle coriander leaves and remove
