l Mutton roast masala

Ingredients- Salt - to taste
- Lemon - 4 drop
- Mutton - 500 gram
- Cashew nuts - 8 no
- Onion - 1 medium sized
- Cooking oil - 5 tablespoon
- Cumin - 1 teaspoon
- Clove - 2 no.
- Cardamon - 1 no.
- Cinnamon stick - small piece
- Ginger-garlic paste -1 tablespoon
- Red chili powder - 2 teaspoon
- Garam masala powder - 3 teaspoon
- Coriander leaf - 3 spring
- Cut mutton to even size cubes
- Sprinkle salt and squeeze 4 drop of lemon to mutton and leave aside for 20 minutes
- Slice onion as thin as possible
- Grind Ginger-garlic paste
- Heat oil in a thick bottom pan
- Turn heat to medium; put mutton in the pan and roast it until its evenly coast with oil and starts leaving its juice
- Remove and keep aside
- Add some more oil to the same pan, fry onion until it turns deep brown; remove
- Fry cashew nuts to the same oil until brown
- Grind fried onion and cashew separately to fine paste
- Add spices and temper them
- Put mutton back in the same pan,
- Add ginger-garlic paste, chili powder, garam masala, salt and fry until off raw flavor
- Add ground onion paste and cook stirring frequently until it start to stick to the bottom
- Add 1/2 cup of water cover and cook until meat is tender (usually it takes around 30-35 minutes)
- Add cashew paste and cook for another 4-5 minutes, sprinkle water (only) if required
- Garnish with coriander leaves
