l Masala rice

- Refined oil - 4 tablespoon
- Mustard seed - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Garlic - 4 cloves
- Red chili - 4 no.
- Curry leaf - 2 spring
- Channa dal - 2 tablespoon
- Peanuts (optional) - 25 gram
- Onion - 1 medium sized
- Chili powder - 1 tablespoon
- Coriander powder - 2 tablespoon
- Garam masala - 1 tablespoon
- Salt - to taste
- Rice - 4 cups
- Coriander leaf -4-5 springs
- Wash and soak rice
- Fine chop garlic and onion
- Heat oil in the pressure cooker
- Add mustard seed, cumin seeds, channa dal, peanuts, garlic, red chili, curry leaves one by one and temper
- Add onion and sauté until it turn dark brown
- Add chili powder, coriander powder and garam masala and fry until it starts to stick to the bottom
- Add water (as per your regular rice water ratio) and allow to boil
- Put in rice and salt and cook (as per your regular whistle or timing)
- Once done, sprinkle coriander leaves and mix well
- If you have leftover plain rice in fridge, you may use them:
- Follow regular procedure until adding power masalas; instead of adding water and raw rice – microwave leftover rice for 30 seconds and mix well
