Ingredients:
- Fenugreek - 5 no.
- Cumin - 1 teaspoon
- Clove - 2 no.
- Red chili - 4 no.
- Coriander seeds - 2 teaspoon
- Onion - 1 medium sized
- Garlic - 8-10 cloves
- Mustard - 1 teaspoon
- Pepper corns - 10 no.
- Chicken - 1 Kg
- Salt to taste
- Cooking oil
- Tamarind extraction - 1.5 table spoon
Preparation:
- Roughly chop onions and garlic
- Dry roast (without oil) cumin, fenugreek, clove, red chili, coriander seeds, onion and garlic over medium flame (ensure you don't burn them)
- Grind the roasted ingredients to a less coarse paste
- Marinate chicken with the ground ingredients and salt
Cooking:
- In a pan, heat cooking oil, add mustard seeds and allow it to crackle
- Put the marinated chicken and coat it evenly with water
- Pour a little water (half of a small tumbler/25 ml)
- Cover and cook in medium fire until tender (check frequently in between/ sprinkle water if necessary)
- Once the chicken is completely tender, add tamarind extraction, just allow it to heat
- Check for salt and remove from fire
Notes:
- Don't boil/over boil after adding tamarind extraction which shall make it too tangy/bitter
- If you are so lazy (or busy) to roast and powder the ingredents,
- temper whole cumin, clove, fenugreek along with mustard seed,
- Marinate chicken with salt, pepper powder, chili powder
- Chop onion and garlic, add to recipe after spices and before chicken
- But there shall be variance in taste
- This goes well with white rice; however, the best bet is with maida (refined flour) dosa or wheat flour dosa
