Egg fried rice
















Ingredient:
  • Rice (preferably basmathi) - 2 cups
  • Refined oil - 5 tablespoon
  • Vinegar - 2 teaspoon
  • Ginger - 20 gram
  • Garlic - 20 gram
  • Onion - 1 medium sized
  • Chili sauce - 1 tablespoon
  • Green peas - 50 gram
  • Carrot - 50 gram
  • Capsicum - 50 gram
  • Baby corn - 50 gram
  • Green beans - 50 gram
  • Soy sauce - few drops
  • Salt - for taste
  • White pepper powder - for taste
  • Spring onion - 3,4 springs
Preparation:
  • Wash and soak rice
  • Finely chop ginger, garlic, onion, carrot, capsicum, green beans and baby corn
Cooking
  • Cook rice, once done add 2 table spoon of refined oil, few drops of vinegar and mix
  • Spread in a flat platter allowing it to cool
  • Place a thick bottom pan (on a high flame) add oil
  • Add one by one: ginger – garlic – onion and fry well
  • Add one by one carrot – beans – green peas – capsicum and fry well
  • Add salt and white pepper
  • Add chilli sauce, soy sauce and vinegar
  • Immediately add rice and toss (or mix) well, still keeping in high flame but not allowing it to stick to the bottom
  • Sprinkle spring onion & toss just before removing from flame.
Note: This recipe stands basic and variation can be made using adding or replacing ingredients to vegetables used


Variations:

l Sprouts:

- Any Sprouts like brussel sprouts, moong sprouts, etc along with the vegetables

l Mushroom:

- Slice button mushrooms thinly
- Saute it after adding ginger and garlic (& follow regular method as given above)
- Include egg to mushroom fried rice for better taste, if you are not a vegan

l Egg fried rice:

- Can include all mentioned vegetable
- Scramble eggs separately with salt and pepper & mix with fried rice at the last stage

l Chicken fried rice:

- Can include all mentioned vegetable
- Cut boneless part of chicken to fine cubes
- Saute it after adding ginger and garlic (& follow regular method as given above)

l Seafood:

- Exclude all vegetables mentioned apart from onion
- Shell prawns & clean and wash fish, cut them to small piece
- Use squids if available
- Either directly include in the recipe and sauté just before adding rice or; Marinate seafoods with salt, pepper and vinegar; deep fry and add at the end
