Coconut milk/extraction

    Coconut mil extraction is used as thickening agent in some of the Indian curries, pulaos and biryanis.

    Steps
    • Grate coconut
    • Grind coconut coarsely (adding minimal water during grinding)
    • Mix with roughly 100 ml of lukewarm water (for every half, medium sized coconut)
    • Drain and squeeze through muslin cloth or big conical tea strainer
    • Repeat the process for three times
    Note:
    • The three extractions shall be of three different consistency (the first being thicker)
    • Some recipes demand the extractions are added depend on their thickness at different stage of cooking.
    • Do not store coconut milk more than a day
